Apple Oat Pancakes with Cinnamon Molasses Gourmet Butter

yield: 18 – 4 inch pancakes

Ingredients

1-1/2-cups all-purpose flour
1/2-cup whole-wheat flour
1/2-cup old-fashioned oats
1/2-teaspoon ground cinnamon
1/4-teaspoon ground allspice
1/8-teaspoon ground nutmeg
2 teaspoons baking powder
2 tablespoons brown sugar
1 tablespoon fresh lime juice
1/2-cup buttermilk
1 cup 2% milk
2 large eggs
1 tablespoon canola oil
1/2-teaspoon vanilla
1 granny smith apple (peeled, cored and diced 1/4 inch)

Preparation

  • Mix all of the dry ingredients in one bowl.
  • Mix all of the wet ingredients in another bowl using a whisk until thoroughly combined.
  • Combine the dry and wet ingredients together.
  • Fold in the diced apples last.
  • Pre-heat a flat top griddle to 350 degrees and place 2 ounces of batter down for each pancake.
  • Serve the warm pancakes with softened Cinnamon Molasses Gourmet Butter.

Blueberry Muffins with Orange Ginger Gourmet Butter


Blueberry Muffinspreparation time: 10 minutes
cook time: 25 minutes
yield: 12 muffins

Ingredients

2 cups all-purpose flour
½ cup sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup Orange Ginger Gourmet Butter melted
1 large whole egg
¾ cup milk
1 cup fresh blueberries

Preparation

  • Heat oven to 375 degrees. Grease the bottoms of 12 muffin cups or line with paper baking cups.
  • In a medium bowl, combine flour, sugar, baking powder and salt; mix well.
  • In a large bowl, whisk the melted butter with the egg for one minute. Add the milk to this mixture.
  • Add the flour mixture all at once; stir just until the dry ingredients are moistened. Carefully fold the blueberries into this batter last. Divide batter evenly into muffin cups.
  • Bake at 375 degrees for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Let the muffins cool for five minutes before removing from pan. Serve warm with additional Orange Ginger Gourmet Butter.
