Yukon Gold Mashed Potatoes with Sun Dried Tomato Butter

Ingredients
2 pounds Yukon Gold potatoes (peeled and cubed)
½ cup half and half
4 ounces Sun Dried Tomato Gourmet butter (softened to room temperature)
¼ teaspoon sea salt
Preparation
- Place potatoes in large saucepan; cover with cold water.
- Bring to boil, reduce heat to medium, and simmer until tender, about 20 minutes.
- Meanwhile, heat half and half in small saucepan until warm.
- Drain potatoes well; cool slightly.
- Use a potato masher and mash potatoes well.
- Stir butter into potatoes.
- Add warm half and half. Stir until completely absorbed.
- Season with salt.
Cinnamon Molasses Sweet Potatoes with Streusel Topping
preparation time: 20 minutes
cook time: 35 minutes
yield: 8 to 10 servings
Ingredients
For the Filling:
5 pounds orange-fleshed sweet potatoes (about 4 or 5 large) such as garnet yams
6 ounces Cinnamon Molasses butter, room temperature
For Streusel Topping:
2/3 cup old fashion oats
2/3 cup flour
2/3 cup firmly packed brown sugar
1/2 cup toasted sliced almonds
4 ounces cold firm Cinnamon Molasses butter
Preparation
- Position rack in center of oven and preheat to 400°F.
- Butter 9- by 13-inch baking dish or 2-quart casserole.
- Line rimmed baking sheet with aluminum foil.
- Pierce each potato with fork and transfer to baking sheet.
- Bake until tender, about 50 minutes. Cool until easy to handle.
- Meanwhile, make streusel: In medium bowl, combine oats, flour, brown sugar, almonds and butter.
- Rub mixture between fingertips until blended and crumbly. Set aside.
- Halve potatoes lengthwise and scoop out flesh into large bowl.
- Add the Cinnamon Molasses butter and mash with potato masher or, for a smoother purée, use a handheld electric mixer.
- Spread mixture in prepared dish and cool completely. (Streusel and potatoes can be made up to 2 days ahead and refrigerated, separately and covered.)
- Sprinkle streusel over potatoes.
- Bake until golden brown, about 35 minutes. Let stand 5 minutes before serving.
- Completed dish can be prepared up to 1 day ahead of time.
